What's on the April meal plan?

Our April meal plan takes the guesswork out of menu planning by listing a whole month's worth of dinners. From Sunday suppers to Friday fish fries, we've got you covered. This is one of our favorites. It's delicious, satisfying and reheats well. My husband would rather have “the orzo dish” than go out to eat.

April 2: Honey Mustard Sheet-Pan Chicken with Brussels Sprouts

Send off Brussels sprouts season in style with this 50-minute weeknight gem.

April 3: Orecchiette with Spring Greens

Can you believe this stunner only requires 15 minutes of your time? That's because the garlic, spinach and peas cook while the pasta boils.

April 4: Chicken and Snap Pea Stir-Fry

This 20-minute main never gets old. (Especially because it takes less time to make than if you ordered delivery from your favorite takeout spot.)

April 5: Sheet-Pan Lemon Butter Veggies and Sausage

Maximum flavor, minimal effort (and dirty dishes). It's loaded with radishes, cherry tomatoes, asparagus, zucchini and more fresh produce.

April 7: Scallion Pancakes

Also called green or spring onions, scallions are at peak deliciousness in early spring. Round out their sharp, peppery flavor with an authentic three-ingredient batter and zingy dipping sauce.

April 8: Spinach with Three-Cheese Stuffed Shells

Want to use frozen spinach? No problem. Just thaw and drain it, stir it into the ricotta stuffing and top it all off with Gouda and peppery tomato sauce.

Snacks & Treats

The Best Healthy Carrot Cake You’ll Ever Eat (gluten free & paleo-friendly!)

Lemon-Asparagus Risotto

This creamy lemon-asparagus risotto, with crisp-tender asparagus, bright lemon and salty Parmesan cheese, is delicious on its own as a main dish or as a side to enjoy alongside roast chicken.

Pan-Seared Cod with Radish & Lentil Salad

This pan-seared cod pairs with a whole-grain mustard vinaigrette for a pop of tangy flavor that elevates this simply cooked piece of fish.

Mushroom Ragout with Herbed Ricotta & Pappardelle

This mushroom ragout is topped with dollops of ricotta, which cut through the acidity of the tomato-based sauce for a balanced flavor and creamy texture.

Whole-Wheat Strawberry Muffins

Kids in the Massachusetts Farm to School program used smart recipe swaps when they created these strawberry muffins: applesauce to replace some of the oil lowers calories, and whole-wheat flour instead of all-purpose flour brings added fiber and more nutrients.

Scallops & Spring Vegetables with Olive-Caper Pan Sauce

This quick-cooking scallop dish can be on the table in just 20 minutes. Packed with vegetables, protein and a flavorful sauce, it makes a great weeknight main for two. Petite carrots are harvested before they reach full maturity, making them thin and quick cooking. Snatch some up from the farmers' market early in the season.

Quinoa with Peas & Lemon

Green peas add a pop of color to this bright whole-grain side dish. Plus, choosing frozen saves you time—no shelling required! Want to save even more time? Use a pouch of precooked quinoa.

Apricot Glazed Chicken with Potatoes & Asparagus

Curry powder is a powerhouse ingredient because it combines a medley of flavorful spices—usually turmeric, fenugreek, coriander and peppers—all in one jar. Increase the heat in this dish by using a hot or red curry powder.
