Calabash, Authentic West African cuisine is made fresh daily. Catering is one of our specialties bringing delicious mouth watering foods to all of your events. Our dishes are flavor packed with actual seasonings, like in our Jollof (red rice) Rice with Stew, Peanut Soup, Roast Beef/Chicken, Palm Oil Fry, Coconut rice, and Black eyed Peas Stew to name a few. They can be served with a protein of your choice or vegan.
When was Calabash authentic born?
Calabash Authentic was born in 2005 out of desire from the Temple family to share their home and culture with the Portland community. In Sierra Leone, Madeleine's cooking skills were well known amongst her community.
