Carthay Circle opened in 2012 and ever since there, I've been smitten. I recall the big announcement of them opened was their intensely knowledgeable staff of sommeliers - 92 of them! The first of its kind - and in a theme park for gosh sakes. Today, Carthay Circle is still impressive.
