Chevys Fresh Mex was founded by Warren Simmons. The chain’s first restaurant was opened in Alameda, California back in 1981. As of this writing, this Tex Mex restaurant has expanded to 38 branches scattered in key locations in America. Most of the branches are owned by Real Mex Restaurants, while others are franchised.
