That's what owner Luke Shimp and his family wanted to create when they developed Red Rabbit. With four successful Red Cow restaurants in Minneapolis and Saint Paul under their belt, Luke, Michael and Peter, wanted to take their winning Red Cow formula and apply it to Italian cuisine.

Community

This restaurant was built out of a need in our community to have a place to sit in a comfortable booth and have a meaningful conversation. We created the layout to make it easy to have a business meeting, quiet conversation with a friend, or celebrate a birthday with a large group.
