After a stage at Noma in Copenhagen, Denmark, Chef Paul returned to Regina, Saskatchewan to finally pursue a culinary venture of his own. Beaks Chicken was created in 2013 as a food truck and ran seasonally for 4 years before becoming a brick-and-mortar year-round location in 2018.
